Double Chocolate Banana Cake with Peanut Butter Frosting

After a very long day, I needed something quick & easy to take to the church dinner the next morning. I rummaged through my cabinets & this is what I came up with! I baked the cake that evening & frosted it the next morning. It was a huge hit at the dinner & everyone raved over it!

The cake is really moist and the frosting is strong on peanut butter and isn’t super sweet.


  • 1 chocolate fudge cake mix
  • 3 ripe bananas, mashed
  • 3/4 cup milk or water
  • 3 eggs
  • 1 stick of butter, melted
  • 2 teaspoons vanilla
  • 2/3 cup dark chocolate chips or chunks

Preheat oven to 350.

Place ingredients in a large mixing bowl. Blend with an electric mixer. Pour into 9×13 pan that has been sprayed with cooking spray. Bake for 35-37 minutes. Remove from oven. Cool completely.



  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla

Cream peanut butter and butter until fluffy. Add remaining ingredients. Blend at low speed until combined. Increase speed & beat until frosting is light & fluffy. Spread on cooled cake.
