Double Chocolate Banana Cake with Peanut Butter Frosting

After a very long day, I needed something quick & easy to take to the church dinner the next day. I rummaged through my cabinets and this is what I came up with. Double Chocolate Banana Cake with Peanut Butter Frosting! I baked the cake that evening & frosted it the next morning. It was a huge hit at the dinner & everyone raved over it!

The cake is really moist and the frosting is strong on peanut butter and not super sweet.

History of the Cake Mix

Cake mixes are such a time saver! But, mixing it up and baking exactly as the box says is not my favorite way to spend my daily allotment of fat and sugar. Fortunately, using the mix as the base and adding taste enhancing upgrades is super simple. Personally, I keep a cake mix on hand in my pantry for that very reason. On days like today, when I do not have the time or energy to bake from scratch, I head to the pantry.

Double Chocolate Banana Cake with Peanut Butter Frosting

Ingredients

  • 1 chocolate fudge cake mix
  • 3 ripe bananas, mashed
  • 3/4 cup milk or water
  • 3 eggs
  • 1 stick of butter, melted
  • 2 teaspoons vanilla
  • 2/3 cup dark chocolate chips or chunks

Preheat oven to 350°.

Place ingredients in a large mixing bowl. Blend with an electric mixer. Pour into 9×13 pan that has been sprayed with cooking spray. Bake for 35-37 minutes. Remove from oven. Cool completely.

Frosting Recipe:

  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla

Cream peanut butter and butter until fluffy. Add remaining ingredients. Blend at low speed until combined. Increase speed & beat until frosting is light & fluffy. Spread on cooled cake.
