- 2 eggs, beaten
- 1 package corn muffin mix (8.5 oz) or 1 cup self rising cornmeal + 1 tablespoon sugar
- 1 can cream corn
- 1 cup frozen corn, thawed
- 1 cup sour cream
- 1 stick butter, melted
- Preheat oven to 350°F.
- Combine all ingredients in a large bowl. Stir just until cornmeal mix is moistened.
- Spray 11×7 baking dish with cooking spray. Pour batter into dish.
- Bake. for 35-40 minutes or until lightly golden.
