Candy Cane Cheesecake with Oreo Crust

Wondering what to do with leftover candy canes? This will be a huge hit at your New Year’s party!

12 candy canes

32 Oreos, regular filling, not double stuff

1/2 stick butter, melted

24 oz cream cheese, softened

3 tablespoons plain flour

3 tablespoons sugar

1/4 teaspoon peppermint extract

1/2 cup white chocolate chips, melted

1/2 cup sour cream

3 eggs

Heat oven to 325.

Cover baking sheet with foil.

Grind candy canes to powder in food processor. Pour into bowl & set aside.

Use processor to turn cookies into fine crumbs. Combine with melted butter. Press into bottom of springform pan. Set aside.

Place candy, cream cheese, flour, sugar, extract, melted chocolate, & sour cream in mixing bowl & blend well. Add eggs, 1 at a time, mixing well after each. Pour into pan.

Place pan onto baking sheet. Bake for 1 hour or until set.

Cool completely. Chill for several hours or overnight.

You can use peppermint Kisses in place of white chocolate & peppermint extract.

Pink color comes from the candy canes. I did not add any food coloring.
