Banana Cake with Peanut Butter Frosting

When you need something easy, delicious, & uses up those ripe bananas sitting on your counter, banana cake with peanut butter frosting is an excellent choice!

  • 1 white or yellow cake mix
  • 1/2 cup brown sugar
  • 2 ripe bananas, mashed
  • 1 cup milk or water
  • 3 eggs
  • 1/2 cup oil
  • 2 teaspoons vanilla
  • 1/2 cup mini chocolate chips

Preheat oven to 350.

Place ingredients in a large mixing bowl. Blend with an electric mixer. Pour into 9×13 pan that has been sprayed with cooking spray. Bake for 35-37 minutes. Remove from oven. Cool completely.

 

Frosting:

  • 1 cup peanut butter
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla

Cream peanut butter and butter until fluffy. Add remaining ingredients. Blend at low speed until combined. Increase speed & beat until frosting is light & fluffy. Spread on cooled cake.
