Beef Stroganoff

The main dish for our Russian meal was Beef Stroganoff. From what I read, the traditional way is to serve it with potatoes. I decided to go with egg noodles because the soup had potatoes in it.

3 tablespoons oil

3 small onions, chopped

1 1/2 lbs beef, sliced in short, thin strips

1/4 cup flour

2 teaspoons dry mustard

2 cups beef broth

1/2 cup sour cream

 

Saute onions in oil until golden brown.

Add beef. Cover & cook over medium heat for 5 minutes. Remove lid & cook for an additional 5 minutes. Salt & pepper to taste. Remove from heat.

Melt butter in saucepan. Stir in flour & dry mustard. Whisk in broth. Cook, stirring constantly, until thickened. Stir in sour cream, mix well, and combine with meat.
