Angel Flake Biscuits

I was probably a teenager the first time my Nanny made Angel Flake Biscuits. My family may disown me for saying this, but prior to that day, I didn’t care much for Nanny’s biscuits because they were usually on the dry side. Angel Flake Biscuits are definitely not dry!

What is the difference between active dry yeast & instant dry yeast?

Active dry yeast is the type that you dissolve in warm water & a small amount of sugar before adding it to the recipe you are making. Instant dry yeast is added in with the dry ingredients without being proofed. Proofing yeast is what lets you know that it is alive. If the yeast bubbles, you know it’s alive. If you use instant yeast, you skip proofing and only know that the yeast is dead when whatever you are baking does not rise. When baking, most recipes use active dry yeast rather than instant dry yeast for this very reason.

Angel Flake Biscuits Recipe

Ingredients

  • 2 1/4 teaspoons or 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1/4 cup warm water
  • 1 tablespoon baking powder
  • 5 cups bread flour
  • 1 teaspoon baking soda
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 cup Crisco
  • 2 cups buttermilk
  • butter

Directions

  1. Preheat oven to 400°F.
  2. In a small bowl, stir yeast & 1 teaspoon sugar into warm water. Set aside for later.
  3. Dust a pastry mat, large cutting board, or portion of a clean counter with flour.
  4. In a large bowl, combine all of the dry ingredients. Cut in Crisco with a large fork or pastry blender until finely crumbled. Set aside.
  5. Mix the yeast into the buttermilk. Stir well. Then add to the crumbled mixture. Using your hands, mix well.
  6. Place dough on floured surface. Pat & stretch until dough is about an inch thick.
  7. Dip biscuit cutter into flour. Cut biscuits, dipping cutter back into flour as needed.
  8. Place biscuits into a buttered pan that is large enough to hold them, but small enough that the biscuits are touching & the biscuits on the outside are touching the pan.
  9. Melt butter & brush on tops of biscuits.
  10. Place pan in middle of oven. Bake for 15-20 minutes or until golden.
