Apple Banana Date Muffins

Gluten-free apple date muffins, close-u

Makes 18 muffins.

  • 3/4 cup oats
  • 3/4 cup walnuts
  • 3/4 cup unbleached white flour
  • 1/2 cup whole wheat flour
  • 1/2 T cinnamon
  • 1 T baking powder
  • 3 very ripe bananas
  • 1 egg
  • 2 T melted butter
  • 1 tsp lemon juice
  • 1/4 cup honey
  • 2 small or 1 large apple
  • 3/4 cup chopped dates
  • Preheat oven to 375.

 

Pulse oats & walnuts in food processor. Combine with both flours, cinnamon, & baking powder. Set aside.

Mash banana, egg, lemon juice,  butter, & honey in a large bowl. Set aside.

Peel apple(s). Shred in food processor. Stir into banana mixture. Add dates & dry ingredients.

Lightly spray muffin pans. Scoop muffin batter evenly into 18 muffin cups.

Bake for 28-30 minutes until lightly golden.
