Applesauce Spice Cake

Sweetened with applesauce and pure maple syrup, this very moist cake will be a hit at your next family dinner!

If, like me, you find yourself unknowingly low on nutmeg, or ground cloves, don’t panic. Simply match the other measurement to the same as the one that you are low on & make up the difference with more cinnamon. Do not do this if you are short on the 1/2 tablespoon of cinnamon! If you are short on cinnamon, use cinnamon applesauce.

 

  • 2 1/4 cups bread or pastry flour – I use unbleached, unbromated.
  • 1 teaspoon salt
  • 1/2 tablespoon baking soda
  • 2 teaspoons baking powder
  • 1 tablespoon flax meal
  • 1/2 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1 1/2 cups oats
  • 1/3 cup oil
  • 1 3/4 cup pure maple syrup
  • 3 eggs
  • 1 1/2 cups unsweetened applesauce

 

Preheat oven to 350.

Combine all dry ingredients in a bowl, Set aside.

Combine oil, eggs, syrup, & applesauce with an electric mixer until well blended. Add in dry ingredients until well incorporated.

Pour batter into a bundt or tube pan that has been greased & floured.

Bake 45-55 minutes or until toothpick comes out clean.

Cool 20 minutes & remove from pan.
