We had a house full of guests tonight, so I pulled out an old favorite, banana chocolate chip waffles. Waffles for dessert/mid-evening snack? Oh yes! These can be served the normal butter & syrup way OR you can turn them into dessert. I set out butter, maple syrup, chocolate syrup, vanilla ice cream, & whipped cream. Those waffles were configured in about as many different ways as we had guests! Since this was mid evening & the toppings added to the size of the dish, most people ate 1/2 to 1/4 of a waffle, which meant doubling the batch was plenty.
In a large bowl, combine:
2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup mini chocolate chips
In a blender, combine:
1 2/3 cup milk
1 ripe banana
1/3 cup oil
2 eggs
1/2 teaspoon vanilla
Combine dry ingredients with banana mixture. Allow to sit for 5 minutes while your waffle iron heats up. Follow instructions given for your iron.
Makes 4 cups of batter.
