Pizza Eggs

Pizza eggs? What are pizza eggs? Quite simply, a deconstructed pizza omelet.

Way back in the late ’70s, my parents went out of town & came home raving about a pizza omelet they had enjoyed. Mom made them the next week & we’ve been eating them ever since. When I had children of my own, I needed to come up with a faster, easier way to make pizza omelets for my growing family. I started making them deconstructed, or simply put, scrambled. When my husband started his own company, I made breakfast for our employees once a week. Pizza eggs were a big time favorite! It was always fun when a new employee started & had pizza eggs for the first time. Everyone of them was a fan after one bite.

Play around with combinations to see what you like best. Personally, I like veggie pizza, but I like my pizza eggs just cheese.

Pizza Eggs

The only required ingredients are eggs & pizza sauce. Mozzarella is highly recommended, unless you are lactose intolerant. From there it’s up to you. What do you like on your pizza? Pepperoni, sausage, ground beef, ham, bacon, onion, pepper, black olives, mushrooms…

If you are using sausage or ground beef, brown & drain.

If you are using onion, pepper, &/or mushrooms, saute.

Scramble eggs with all toppings except for cheese & sauce. As the eggs are finishing, add cheese. Once cheese is melted, add warm sauce.

If you want to make a pizza omelet, fill the omelet with toppings & cheese. Pour warmed sauce on top of omelet after it is on the plate. Putting the sauce inside the omelet can make a huge mess as the sauce typically makes the omelet fall apart as you are trying to plate it.
