Snowball cookies are my favorite Christmas cookie! The cookie itself is not very sweet, which I like. The sweetness comes in with the powder sugar that you roll the cookies in after they bake.
- 2 cups all purpose flour
- 2 cups finely chopped pecans or walnuts
- 1/4 cup sugar
- 2 sticks of butter, softened
- 1 tsp vanilla
Combine all ingredients in a large mixing bowl. Mix on low for several minutes. Dough will be very crumbly. If you do not make sure the butter is well incorporated and evenly distributed, some cookies will have too much butter and change shape as they bake.
Shape rounded spoonfuls into balls. (I use a small cookie scoop.) Place on ungreased cookie sheets. Bake at 325 for 25-30 minutes.
Remove from oven. Roll in powdered sugar while still warm. If you want, you can roll in powdered sugar again when cool. Personally, I think this makes them too sweet.
