Cream of Tomato Soup

Cream of Tomato Soup

2T butter
2 T flour
12 oz can evaporated milk
¼ cup milk
1 qt tomato juice
¼ cup tomato paste

Melt butter. Stir in flour. Whisk in milk. Heat until thickened.
Whisk in tomato paste.
Stir in tomato juice. Salt & pepper to taste. Heat through.

I can tomato juice every summer just for making soup. Store bought works just as well, but you do get spoiled to the taste of home canned!
